Salute the Humble Avocado on July 31st

Just in time for summer, July 31st is National Avocado Day. The entire day is dedicated to celebrating the super food admired for its Omega 3 fatty acids and restorative health qualities. Served as a main dish, appetizer and even a dessert, this versatile fruit is popular with foodies and hungry noshers alike.

 

Avocados have moved way beyond guacamole, with world class chefs and home cooks adding avocados to breakfast smoothies and desserts to create a new dimension of flavor and texture. Avocado toast has become a staple on many restaurant menus along with avocado ice cream and deviled eggs spiked with avocado. The super fruits creamy texture adds a velvety creaminess that can’t be matched.

 

Honor the avocado on Avocado Day by trying one of these recipes:

 

Spicy Guacamole

Mash two ripe avocados

Add a sprinkle of diced jalapeno peppers to taste

Serve with your favorite tortilla chips and cut-up veggies

 

Mashed Potatoes

Boil four medium sized potatoes for 25 minutes

Drain and mash while warm using a fork or hand mixer

Add half a cup of milk

Add one avocado and continue mashing the mixture

Season with salt and pepper to taste

 

Breakfast Smoothie

Add your favorite fruit to a blender

Add nut-milk and blend until creamy

Add half an avocado

 

Cheesy Avocado Baked Chicken

Season two boneless skinless chicken breasts with salt and pepper

Preheat oven to 375 degrees

Bake chicken for 25 minutes

Remove and top with avocado slices and provolone cheese

Return to oven and melt cheese
